We told you about the Grinch-worthy cake coming your way today..
and we think even Mr. Grinch would smile about this one!

Pistachio cake is a favorite of ours, and we thought we should share it with you!

Our Supplies:

1 Box Yellow (or White) Cake Mix
2 Pkgs. of Pistachio Pudding
3/4 c. Canola Oil
1 c. Water
4 eggs
3/4 c. Plain Greek Yogurt
2 tsps. Cinnamon
1 Container of Cool Whip
Bag of Pecans

Preheat your oven to 275°. Mix all of the ingredients (except the cool whip and the pecans) well.
We then poured the mix into all sorts of pans.  It makes enough for (2) 10″ round cake pans, but we made (1) 10″ round cake, 2 small loaves, 3 regular cupcakes, and 4 miniature cupcakes.  We wanted to see how creative we could get with the different sizes and shapes.
Bake for 10 minutes at 275°, another 10 minutes at 300°, and 35 minutes at 325°
(for a grand total of 55 minutes).  We took the cupcakes out after 30 minutes.

Here is what the cakes ended up looking like:

We wish we would have grabbed the loaves/large cake a few minutes sooner, but they still tasted amazing!  You can use a third package of pudding to mix into the cool whip to give the topping an extra oomph, but we liked the crispness of the clean white, as well as the way the cool whip balanced the flavors of the cake.  Then we sprinkled pecans on top of the cool whip. YUM. And then we didn’t take a picture of it because our guests were so excited.. sorry!

We then played around with a tiny trifle, and loved how it turned out!
A layer of cake, a few pecans, a dollop of Cool Whip: And Repeat!
